A vegetable of Asian decent that has stayed true to it's traditional roots while gaining worldwide popularity. The white, purple, or green stalked plants are grown for the stems and leaves. The plants are used in stir fries, raw with dips, and salad mixes. The nutritional leafs and stems have significant amounts of vitamin A and K, and folate. They also contain moderate amounts of calcium, manganese, magnesium, and omega-three fatty acids.
