Collards are leafy vegetables in the cabbage family and unlike cabbage they do not form a tightly wrapped head of leaves.  Instead collards are grown solely for their loosely spaced leaves of a mild flavor.  Collard greens are enjoyed throughout the world with popularity larger in the southern United States, Brazil, India, and Portugal.  These greens are enjoyed in soups, stews, fresh, and as a stand alone dish by either steaming or boiling them.  Collards are very nutritious and contain moderate to larger amounts of vitamin K, vitamin C, and soluble fiber.
