• Peppers can be harvested when the outside is firm to touch.  
  • Cut the stems off 1 inch above the pepper's cap.
  • Harvesting is best done in early morning and evening hours for better quality.  
  • The use of sharp tools is good practice to minimize breakage of the central stem and to
    avoid creating an area that is susceptible to disease.
  • Use latex gloves, if desired, when harvesting hot Chile peppers, as the juice on your
    hands can irritate sensitive skin.
  • Peppers can be canned, used fresh, or frozen.
