• The whole plant is edible, but the white shanks are the part that is most desirable.
  • Shanks can be pulled at any size.
  • Remove a majority of the leaves and wash the shanks thoroughly.
  • Cut out any remaining leaves and green tissue from the plants and dice the to desired
    texture
  • Add to soups and salads.
  • Use leeks fresh or place in the refrigerator for up to one week.
