- The whole plant is edible, but the white shanks are the part that is most desirable.
- Shanks can be pulled at any size.
- Remove a majority of the leaves and wash the shanks thoroughly.
- Cut out any remaining leaves and green tissue from the plants and dice the to desired
texture
- Add to soups and salads.
- Use leeks fresh or place in the refrigerator for up to one week.
